Meal Prep Virginity!

Relating back to my last post, I have absolutely zero time. 

SOOO... In order to stay on track with being healthy and nutritious,


 I'm trying this new thing where I "meal prep" ahead of time aka cook all my meals at the beginning of the week for easy lunches at the office and easy warm-up-able dinners when I'm ravenous getting home at the end of the day from work/exercising. 

This week I made: 

Stuffed Peppers (find recipe on Cinco de Mayo post)

Spaghetti Squash Junx

  • Spaghetti Squash (cooked)
  • Frozen Spinach (thawed)
  • Onions
  • Black beans
  • Tomatoes
  • Corn
  • Parmesan cheese
  • spices and FRESH HERBS 


So now I can have delicious and nutritious meals in the snap of a finger 
(more like 1:30 min in the microwave)

Try it... no excuse not to stay on track!



Les Mills East Coast

Can't believe I was thinking this summer would slow down a little and I would actually have time to catch my breath... ha! My schedule is packed even more than usual. 

But I wouldn't trade anything for it.

Anyways, I basically have found my dream job... integrating fitness with business. 
The people are amazing. 
The company is amazing.
The purpose is amazing. 

So my summer is filled with working 9-5 everyday at the East Coast headquarters, 
and I wouldn't trade it for anything!

Currently in the process of time management as I'm taking a night business class, teaching group exercise at two different studios in Baltimore, and working full time.. all part of the journey right!
